To take photos with your Camera app in CyanogenMod, just follow the next steps:
1. - Go to the Camera app
2. - Click the menu button, and then click Advanced Options
3. - You'll see various options, if you want to take photos with the Volume Up button, check the Volume Up check box, if you want to take photos with Volume Down button, check the Volume Down check box, and finally, if you want to take photos with the Power Button look down and check the Power Button check box (this didn't work for me).
Only tested in CM 7.2
